EU Allergen Regulations: A Digital Solution
Stay compliant with EU allergen requirements using digital menus that clearly display allergen information for every dish.

Understanding EU Allergen Requirements
EU Regulation No. 1169/2011 requires all food businesses: including restaurants, cafés, and bars: to provide allergen information for every dish served. This isn't optional guidance; it's a legal requirement across all EU member states, and each country sets its own penalties for non-compliance.
The regulation covers 14 specific allergens: cereals containing gluten, crustaceans, eggs, fish, peanuts, soybeans, milk (including lactose), tree nuts (almonds, hazelnuts, walnuts, cashews, pecans, brazil nuts, pistachios, macadamias), celery, mustard, sesame seeds, sulphur dioxide and sulphites, lupin, and molluscs. Every dish on your menu must clearly indicate which of these allergens it contains.
Why Paper Menus Struggle with Allergen Compliance
Paper menus were designed in an era before allergen regulations. Adding 14 allergen icons to every dish makes menus cluttered and hard to read. Updating allergen information when recipes change means reprinting. And multilingual allergen information: necessary in tourist areas: multiplies the printing and space challenges.
Many restaurants resort to a footnote approach: 'Please ask your server about allergens.' This technically complies in some jurisdictions but creates liability issues (what if the server is new or busy?) and a poor customer experience. Guests with serious allergies need to see allergen information clearly, not negotiate it through a conversation in a language they may not speak fluently.
Digital Menus: Built for Allergen Management
Digital menus solve many allergen communication challenges at once. In ComidaQR, the allergens a dish contains are listed with the dish and again when the guest opens its details, so the information is there when it matters without dominating the browsing experience.
When recipes change, allergen updates go live as soon as you save them. No reprinting, no crossed-out information, no outdated menus still in circulation. And because the menu is digital, allergen names are shown in the language the guest picks: ComidaQR has the 14 allergen labels ready in all 22 of its menu languages, so a Spanish speaker reads them in Spanish and a Japanese speaker in Japanese.
Implementing Allergen Management
Start with a comprehensive allergen audit of every dish on your menu. Work with your kitchen team to identify every ingredient and map it to the 14 regulated allergens. Pay special attention to sauces, dressings, and garnishes: these are where hidden allergens most commonly appear.
Use your digital menu platform's allergen tools to mark each dish. In ComidaQR you set each of the 14 allergens per dish as 'contains' or 'may contain'. Guests see the 'contains' list; 'may contain' notes stay in your admin as a reference for staff answering questions. If you import a menu with AI, allergens your menu already names are picked up and dishes that need checking are flagged, but the kitchen team should still confirm every dish.
Train your staff on allergen procedures. Even with a comprehensive digital menu, servers should be prepared to answer allergen questions, know how to check with the kitchen, and understand the severity of allergic reactions. Digital tools support but don't replace human knowledge and care.
Beyond Compliance: Allergens as a Competitive Advantage
Restaurants that handle allergens well earn fierce loyalty from customers with dietary restrictions. These guests often struggle to find restaurants where they feel safe and informed: when they find one, they return regularly and recommend it enthusiastically within allergy communities.
Clear allergen management also reduces operational risk. The cost of a single allergic reaction incident: in terms of health consequences, liability, reputation damage, and potential legal action: far exceeds the investment in proper allergen documentation and communication.
